Savory Shortcrust Pastry for Quiches & Pies

  1. Ingredients:

    • 2 cups (250g) flour

    • 1 tsp salt

    • 1 cup (225g) butter

    • 2–3 tbsp cold water

    • (Optional: add 1 tsp dried thyme or rosemary for flavor)

    Instructions:

    1. Mix flour, salt, and herbs. Rub in butter until crumbly.

    2. Add cold water to form dough. Chill 30 min.

    3. Roll out and line pie dish. Blind bake at 180°C (350°F) for 15 min.

    4. Fill with quiche mixture (eggs, cream, cheese, veggies, or meat) and bake until set.
