🥧How to Make French Fruit Tart

Ingredients:

For the tart crust:

  • 1 ¼ cups (160g) all-purpose flour

  • ½ cup (115g) unsalted butter (cold, diced)

  • ¼ cup (30g) powdered sugar

  • 1 egg yolk

  • 1–2 tbsp cold water

For the pastry cream:

  • 2 cups (500ml) whole milk

  • 4 egg yolks

  • ½ cup (100g) sugar

  • ¼ cup (30g) cornstarch

  • 1 tsp vanilla extract

  • 2 tbsp unsalted butter

For topping:

  • Fresh fruits: strawberries, kiwi, blueberries, mango

  • 2 tbsp apricot jam (for glaze)

Instructions:

  1. Make the crust: Mix flour and sugar. Cut in butter until crumbly. Add egg yolk and cold water, mix until dough forms. Chill for 30 min.

  2. Roll dough, press into tart pan, prick with fork. Bake at 180°C (350°F) for 15–20 min. Let cool.

  3. Pastry cream: Heat milk. Whisk egg yolks, sugar, and cornstarch. Slowly mix in hot milk, return to heat, stir until thick. Add vanilla and butter. Cool completely.

  4. Fill tart shell with pastry cream.

  5. Decorate with sliced fruits. Heat apricot jam with a bit of water and brush on top. Chill before serving.
