Basic Shortcrust Pastry Dough (Sweet or Savory)

  1. Ingredients:

    • 2 cups (250g) all-purpose flour

    • 1 cup (225g) unsalted butter (cold, cubed)

    • ½ tsp salt

    • 2–3 tbsp cold water

    • (Optional sweet version: add 2 tbsp sugar)

    Instructions:

    1. Mix flour and salt (and sugar if making sweet pastry).

    2. Rub in butter with fingertips until mixture looks like breadcrumbs.

    3. Add cold water gradually, mix until dough comes together.

    4. Shape into a disk, wrap, and chill 30 minutes before using.

    5. Roll out and bake blind (with baking beans) at 180°C (350°F) for 15 min, or fill and bake as recipe requires.
