Almond Shortcrust Pastry (Sweet Nutty Base)

Ingredients:

  • 1 ½ cups (190g) flour

  • ½ cup (60g) almond flour (ground almonds)

  • ½ cup (100g) sugar

  • 1 cup (225g) butter

  • 1 egg yolk

  • 2 tbsp cold water

Instructions:

  1. Mix flour, almond flour, and sugar. Rub in butter.

  2. Add egg yolk and water, mix to dough. Chill 30 min.

  3. Roll out and bake 12–15 min at 180°C (350°F).

  4. Excellent for lemon curd tarts, cherry pies, or frangipane filling.
