How to Make
Classic Danish Pastry Dough (Base Recipe)
Ingredients:
2 ½ cups (315g) all-purpose flour
¼ cup (50g) sugar
1 packet (7g) instant yeast
½ tsp salt
½ cup (120ml) warm milk
1 large egg
½ cup (115g) unsalted butter (cold, cubed)
½ cup (115g) unsalted butter (for layering, softened)
Instructions:
Mix flour, sugar, yeast, and salt in a bowl. Add warm milk and egg, knead into dough.
Add cold butter cubes and knead until just incorporated. Chill 1 hour.
Roll dough into rectangle, spread softened butter over ⅔, fold like a letter. Chill 30 min.
Roll and fold 2 more times (like puff pastry).
Wrap in cling film and chill 1 hour before shaping into pastries.
