Classic Danish Pastry Dough (Base Recipe)

Ingredients:

  • 2 ½ cups (315g) all-purpose flour

  • ¼ cup (50g) sugar

  • 1 packet (7g) instant yeast

  • ½ tsp salt

  • ½ cup (120ml) warm milk

  • 1 large egg

  • ½ cup (115g) unsalted butter (cold, cubed)

  • ½ cup (115g) unsalted butter (for layering, softened)

Instructions:

  1. Mix flour, sugar, yeast, and salt in a bowl. Add warm milk and egg, knead into dough.

  2. Add cold butter cubes and knead until just incorporated. Chill 1 hour.

  3. Roll dough into rectangle, spread softened butter over ⅔, fold like a letter. Chill 30 min.

  4. Roll and fold 2 more times (like puff pastry).

  5. Wrap in cling film and chill 1 hour before shaping into pastries.
