π How to Make Mini Lemon Tartlets

For the crust:
1 ΒΌ cups all-purpose flour
Β½ cup butter
2 tbsp sugar
1 egg yolk
1 tbsp cold water
For the lemon curd:
Β½ cup lemon juice (fresh)
2 tsp lemon zest
3 eggs
ΒΎ cup sugar
Β½ cup unsalted butter (cubed)
Instructions:
Prepare and bake tartlet shells as above. Let cool.
In a saucepan, whisk eggs, sugar, lemon juice, and zest.
Cook on low heat, stirring, until thickened (5β8 min). Remove from heat, add butter.
Pour curd into shells. Chill until set.
Optional: top with whipped cream or meringue.
