πŸ‹ How to Make Mini Lemon Tartlets

Ingredients:

For the crust:

  • 1 ΒΌ cups all-purpose flour

  • Β½ cup butter

  • 2 tbsp sugar

  • 1 egg yolk

  • 1 tbsp cold water

For the lemon curd:

  • Β½ cup lemon juice (fresh)

  • 2 tsp lemon zest

  • 3 eggs

  • ΒΎ cup sugar

  • Β½ cup unsalted butter (cubed)

Instructions:

  1. Prepare and bake tartlet shells as above. Let cool.

  2. In a saucepan, whisk eggs, sugar, lemon juice, and zest.

  3. Cook on low heat, stirring, until thickened (5–8 min). Remove from heat, add butter.

  4. Pour curd into shells. Chill until set.

  5. Optional: top with whipped cream or meringue.
